Landing a clean shot on an animal in game does not always guarantee a one-shot-kill. Animals hit by a projectile have a chance to drop immediately, accomplishing this is tantamount to a “critical hit”. It is more likely instead that your wounded game ends up fleeing, leaving a trail of blood behind. A savvy hunter can follow the trail their prey leaves behind, eventually finding the carcass. Depending on the weapon used, animals may bleed out more or less quickly, changing the time it takes for them to die.
